Potato Starch

A useful kibble starch with little else

Potato starch is the dried starch separated from crushed potatoes, with almost no protein, fat or fiber. In kibble it helps the pieces expand during cooking and supplies digestible carbohydrate energy, and that is all it does.

How it is made

Starch plants crush potatoes to release starch granules. The pulp and juice leave the starch stream for other uses. Washing and drying turn the separated granules into a powder that kibble makers can measure into recipes.4,7
